Ginger, Zingiber officinale is a native plant from India and south asia tropical regions. It is an herbaceous and perennial plant with rhizomes, very valued for the flavour industry. The total production of fresh ginger is about 3.3million tones, being India, Nigeria and China the production leaders.Ginger is a very popular spice worldwide can be used either in meals or medicine.The ginger oil is a by product of the fresh ginger industry. The big rhizomes are usually sold for fresh consumption but the small or broken pieces of ginger are also used, first as a dry ginger pieces, or powdered ginger or finally to obtain Ginger oil. We can assume that ginger oil is basically the last step of ginger exploitation.Ginger oil has a great odour, warm, fresh, wood, spicy, it is a tenacious and rich essential oil.It is used in perfumery to introduce warmth and spicy sweetness notes. In flavours, ginger oil gives an interesting face where it is used, can be used in alcoholic beverages like liqueurs, carbonated drinks or baker goods.
